Veg Paneer Korma
Veg paneer korma is a traditional south Indian curry made with mixed vegetables, paneer, coconut & spices. Adding Paneer is an optional, I love paneer hence I use paneer in all possible dishes. There are different ways of making korma, this is my version. Korma is served with Chapathi, Pori, Ghee rice or pulao.

Ingredients
- 1 Carrot
- 10 Beans
- 1 Potato
- ½ cup Green peas
- 100 grams Paneer
- 2 ½ tsp Oil/Ghee
- Salt to taste
- Water as required
- Chopped coriander leaves to garnish
For Masala Paste
- 1 Onion
- 10 Garlic clove
- 2 inch Ginger
- 5 Green chillies (+ or - depending on your taste)
- 4 Cloves
- 1 inch Cinnamon stick
- 5 Black peppercorns
- ½ cup Grated coconut
- 1 ½ tsp Coriander powder
- Handful Coriander leaves
- 5 Whole cashews (optional)

Prep
- Rinse & cut vegetables (carrot, beans & potatoes). Cube paneer into small pieces.
- Roughly chop option & green chillies. (this is for masala paste)
Method - Masala paste
- Heat ½ tsp oil in kadai, sauté onion, garlic, ginger, green chillies, cloves, cinnamon & black peppercorns until onion is translucent.
- Grind sautéed onion mixture, grated coconut, cashew, coriander powder & coriander leaves to smooth paste.
Method - Korma
- Heat 2 tsp oil/ghee in pressure cooker, add cut vegetables (carrot, beans, potato & green peas) & sauté for 2 minutes.
- Add grind masala paste to pressure cooker, sauté for 5 minutes in low flame.
- Then add salt, mix well & pressure cook for 1 whistle.
- Once pressure subsides, open the cooker add paneer cubes & cook for 2 more minutes.
- Garnish with coriander leaves & serve with Chapathi, Pori, Ghee rice or pulao.
