Lemon Sevai
Ingredients
200 grams
Rice Shavige/Sevai
(I use Anil or Concorde brand)

Capsicum
thinly sliced
2 tbsp
Oil
1 tsp
Mustard seed
2 tsp
Channa dal
2 tsp
Urad dal
¼ cup
Ground nut
4-5
Slit Green chillies
1 tsp
Turmeric powder
Curry leaves
Few

Lemon
½ cup
Grated coconut
Chopped coriander leaves
Handful
Salt
to taste
Water
as required
Instructions
Prep
Heat water in a pan with salt & few drops of oil, till it comes to boil.
Add the rice sevai and cook according to the package instructions.
Drain the sevai in a colander and toss it in ½ tsp oil, this helps it to prevent it from sticking to each other. Set aside.
Method
Heat oil in a wide pan & add mustard seeds. Once they splutter, add channa dal, urad dal & ground nut. Fry until dal turns brown.
Add curry leaves & green chillies, sauté for few seconds.
Now add sliced capsicum & sauté for few minutes. (I like to retain the crush of capsicum so do not overcook them)
Once capsicum is cooked, add turmeric powder & salt. Sauté for few more seconds.
Then add the grated coconut & chopped coriander leaves to pan, mix everything well.
Add cooked Rice shavige/Savai to prepared temper.
Mix well & close the lid. Cook for one more minute under medium to low flame. Remove from the heat.
Lastly squeeze juice from a lemon & add it to prepared Shavige. Mix Gently.
Serve as is or along with coconut chutney.
