Methi Pulao | Green Fenugreek Rice
Methi Pulao is healthy rice dish made from methi leaves and few basic spices. This is not only healthy but quick and easy to make.

Ingredients
- 1 cup Basmati rice
- 2 medium Onion
- 1 bunch Methi/Fenugreek leaves
- ¼ cup Green peas (optional)
- 1 Bay leaf
- 4 Cloves
- 1 inch Cinnamon stick
- 1 Black cardamom
- 1 Star Anise
- 1 tsp Oil
- 1 tsp Ghee
- ½ cup Coconut Milk
- Salt to taste
- Water approx. 1 cup or as required
For masala paste
- 2 Green chilli (+ or - depending on your taste)
- Handful Coriander leaves
- 5 Whole cashews
- 2 inch Cinnamon stick
- 6 Cloves
- 6-8 Garlic cloves
- 2 inch Ginger

Prep
- Wash & soak Basmati rice in 1 cup water for 30 min.
- Grind all ingredients listed under “Masala paste” to smooth paste & set aside.
- Cut onion lengthwise. Wash & cut methi (fenugreek) leaves.
Method
- Heat Ghee & oil in a kadai. Sauté whole spices (Bay leaf, cloves, cinnamon, cardamom) on a medium flame for few seconds.
- Add thinly sliced onions & sauté until the onion turn golden brown.
- Add methi leaves & sauté till they wilted.
- Add grinded masala paste & green peas, sauté for 3-4 minutes.
- Add water (approx. 1 cup) which is used to soak basmati rice, wait until it comes to boil and add salt as required.
- Now add coconut milk & rice, wait until it comes to boil.
- Close the kadai with lid, let it cook in low flame for 15 min. (if you are using the pressure cooker, close the lid & don’t put the whistle, let it cook in low flame for 15 min)
- After 15 min let it cool for 5-10 min & mix gently.
- Serve hot with your favourite raita or plain curd.
