Channa Masala | Chole Masala
A delicious and protein pack curry. Chickpeas are cooked in onion tomato & basic Indian spices.

Ingredients
- 1 cup Chickpeas (Soaked overnight)
- 2 Onion (finely chopped or grind to paste)
- 2 Tomato (finely chopped or grind to paste)
- 1 tbsp. Ginger Garlic Paste
- 1 Bay leaf
- 4 Cloves
- 1 inch piece Cinnamon
- 1 Green cardamom
- 1 Black cardamom
- ½ tsp Cumin
- ½ tsp Turmeric powder
- 1.5 tsp Red chilli powder
- ½ tsp Cumin powder
- ½ tsp Coriander powder
- ½ tsp Garam masala powder
- 1.5 tsp Chole masala
- 4 tbsp Oil
- Salt to taste
- Water Approx. 1.5 cup
- ¼ cup Coriander leaves finely chopped

Instructions
- Heat oil in a pressure cooker, add whole garam masala (bay leaf, cloves, cinnamon green & black cardamom) and cumin seeds. Fry for few seconds.
- Add grind onion paste & sauté until onion is light brown.
- Then goes the Ginger garlic paste. Sauté until intense smell of ginger garlic paste is gone.
- Now add tomato paste & all spice powders (turmeric, red chilli, coriander, cumin, garam masala & chole masala powder. Sauté till onion tomato & spice mixture start releasing oil.
- Add soaked chickpeas, mix & cook it for 2-3 minutes on low flame.
- Add approx. 1.5 cup of water and salt, stir well and close the lid of pressure cooker.
- Cook it for 5 whistles on low or medium flame.
- After five whistles, turn off the flame and let the pressure cooker cool down completely.
- Open it and add coriander leaves, mix it well.
- Serve chole masala with poori, roti, chapathi or paratha.
