Vegetable Stew
Vegetable Stew is a traditional Kerala dish served with appam or idiyappam. This stew is made with mixed vegetables and fresh coconut milk.

Ingredients
- 1 Onion
- 2 Green chillies
- 1 tsp Ginger finely chopped
- 3 Garlic cloves minced
- 1 Potato
- 1 Carrot
- 10 Beans
- ½ cup Green peas
- 1½ cup Thin coconut milk
- ½ cup Thick coconut milk
- 4 Cloves
- 1 inch Cinnamon stick
- 2 Green cardamom
- 1 Bay leaf
- ½ tsp Pepper powder
- Few Curry leaves
- 1 tbsp Coconut oil
- Salt as required

Prep
- Rinse & cut vegetables (carrot, beans & potatoes).
- Chop option & green chillies
Method
- Heat coconut oil in kadai, sauté whole spices (cloves, cinnamon, cardamom & bay leaf) for few seconds.
- Add the onions, curry leaves, green chillies, ginger & garlic. Sauté well till onion turn translucent.
- Add cut vegetables, thin coconut milk, salt & pepper powder. Cover & cook till vegetables are soft.
- Open the lid, check seasoning and add thick coconut milk. Simmer for few minutes.
- Do not boil the stew after adding the thick coconut milk.
- Mash few pieces of potatoes to add thickness to the gravy.
- Serve hot with appam or idiyappam.
