Sabudana Vada | Sago Potato Patties
Sabudana vada is traditional dish of Maharashtra & is often served with curd or green chutney. This is a crispy delicious snack made by deep frying Sabudana & Potato spice patties.

Ingredients
- 1 cup Sabudana/Sago
- 2 medium Potato
- ¾ cup Roasted Peanuts
- 3 Green chillies (finely chopped)
- ¼ cup Coriander leaves (finely chopped)
- 1 tsp Jeera/Cumin
- 2 tsp Lime juice
- 1 tsp Sugar
- Salt to taste
- Oil for deep frying

Prep
- Wash & soak sabudana in enough water for 4-5 hours or overnight. After soaking time is over sabudana must have soaked up all the water and will be looking very nice and puffy.
- Boil Potatoes, peel the skin & mash.
- Take roasted peanuts in blender & make it a coarse powder.
Method
- Take soaked sabudana, mashed potatoes, coarse peanut powder, green chillies, coriander leaves, jeera, lime juice, sugar & salt in a bowl.
- Mix them well. The dough should be stiff so you can make patties.
- Divide the dough into equal portions & make them into round patties.
- Now heat oil in frying pan on medium to high heat for deep frying
- Once oil is hot, slide sabudana vada patties into hot oil.
- Deep fry them till they turn golden brown in colour from all the sides. Do stair occasionally.
- Once they are fried till golden brown, take them out and drain on paper towel.
- Serve hot with green chutney or curd.
